POISK unit for the automatic production of pulish (cold liquid sourdough) with a capacity of 4,500 kg of pulish per cycle.

The unit provides:

  1. Dosing the flour into the mixer;
  2. Feeding water of a specified temperature and volume to the mixer;
  3. Product stirring;
  4. Feeding the product from the mixer to the fermenter;
  5. Fermentation of sourdough with mixing according to the set temperature and time schedule;
  6. Dosed sourdough unloading;
  7. The current information on the system state (how much product is in every fermenter, at what stage is the process, when the stage in each fermenter ends).

Structure of the unit:

  1. A water dispenser with a heating function with a capacity of 500 l/h;
  2. A flour dispenser with a capacity of 500 kg/h;
  3. A mixing unit of 400 l;
  4. 6 horizontal type fermenters equipped with stirring devices;
  5. A sourdough dispensing platform;
  6. A climatic unit;
  7. A product transport system;
  8. A central control board with two monitors.

Unit description:

  1. The water dispenser – is a heated container equipped with heating elements, a thermal regulator, a pulse counter, a pump. The dispenser is connected to the water supply system. After the water supply to the dough mixing unit, its level in the dispenser is automatically filled and the preheating is carried out to the set temperature.
  2. The flour dispenser – is a container equipped with strain gauges and an automatic valve for unloading the flour into the dough mixing unit.
  3. The mixing unit – is a container equipped with a dough mixing unit with adjustable speed, automatic valves for unloading the product, a lid with automatic opening, valves to provide the excess pressure during unloading.
  4. The fermenter – is a horizontal temperature-insulated tank equipped with a system of automatic valves for products loading and unloading, as well as for creating the excess pressure, a screw-type agitator with polypropylene inserts for cleaning the tank walls. The fermenter is also equipped with a liquid lining (water-propylene glycol mixture) for maintaining the set temperature.
  5. The dosed sourdough platform is a platform equipped with strain gauges for weighing the product loaded into the bowl. It is located on the ground floor of the building
  6. The climate unit consists of a refrigeration unit and a heating element in order to maintain the desired product temperature in the fermenter. The climate unit also includes a damper tank for the coolant, pumps and a system of bypass valves.
  7. The transportation system consists of transport pipes, a system of valves and receivers to create the excess pressure.
  8. The central control board consists of a controller, memory units, actuators and two monitors with touch controls located on the upper and lower floor of the building.
